Hello, I have a girlfriend that is interested in painting figures so what good non-military subjects do you recommend that are good for a novice.

Lucky you!! Nice to see your GF wanting to try out the hobby.
There are so many figures out there...zombies/ fantasy/ movies...the list goes on! You should check out Andrea Miniatures. They have an Indiana Jones figure titled "the adventurer". The detail is amazing and a good one to try out the basics.

Start simply and cheaply. Look at the Reaper Bones series, they are plastic, not expensive and take paint well. Lots of figures and you don't have to follow an explicit color scheme. Spend your money on a good brush or two, that will make a great difference.
